How to Use the Dual Smokestacks for Temperature & Smoke Control
The Bear Flag’s dual smokestacks are engineered for precise airflow control, allowing you to run this grill as a true wood- or charcoal smoker. Each smokestack can be adjusted independently, giving you greater control over heat levels, smoke density, and cooking style.
1. Set Up Your Fire for Smoking

Build a small wood or charcoal fire in the bottom of the firebox.

Keep the flames low and steady—smoking relies on slow, controlled heat.

Place your food on the opposite side of the fire for indirect cooking.
2. Use the Smokestacks Like Vents
Each stack has an adjustable cap so you can fine-tune airflow:

Open stacks = more airflow = hotter fire
-
Closed stacks = reduced airflow = cooler fire
You can run both stacks equally or use them independently, depending on the cook style.
Recommended Settings for Smoking
🔸 Low & Slow (225°–275°F)

Stack 1: 25–40% open

Stack 2: Closed or barely open

This creates a gentle draw and maintains a steady, cooler burn.
🔸 Medium Smoking (275°–325°F)

3. Create Directional Smoke Flow
If you want stronger smoke on one side:

Open the smokestack furthest from the fire

Close or partially close the smokestack closest to the fire
This pulls smoke across the food before it exits, resulting in a richer, fuller smoke profile.
4. Fine-Tune During the Cook
The Bear Flag responds quickly to smokestack changes:

To raise heat → Open both stacks slightly more

To lower the heat → Close one or both stacks halfway

To reduce smoke sharpness → Increase airflow for cleaner burn

To increase smoke flavor → Reduce airflow slightly (but never fully close both)
